Our Custom Fed Program

Our program’s focus is quality over quantity. This allows us to guarantee high choice+ beef for our customers. We select only the top 20% of our yearlings to be added to this program. They are grass-fed until they reach an average weight of 850 lbs. After they reach this weight average, they are placed on a free choice custom grain ration, while still having full access to a natural grass pasture. We believe in allowing our cattle to reach their highest genetic capability. All ranch-to-table beef is born and raised on the ranch for its entire life cycle.

How Long to Grill Steak - Grilling Guide for Cooking Steak

Want to grill the perfect steak right in your own backyard? With our steak-grilling guide and cooking chart, we are confident you can cook the best steak with our premium cuts of beef. Here are a few things we recommend having when cooking your steak:

• Charcoal or gas grill

• Meat thermometer

• Paper towels

• Your favorite steak marinade, or simply kosher salt and pepper

CHILL OUT

Before getting started on the grill, we recommend removing the thawed meat from the refrigerator and letting the steak rest at room temperature for at least 30 minutes before cooking. This allows the meat to cook evenly all the way through.

READY, SET, SEAR!

Pre-heat your Gas or Charcoal Grill: Place steaks over high heat and sear EACH SIDE for 1 minute with lid closed. Then transfer steak to indirect heat OR reduce to low heat. Close the lid and cook according to the cooking times and temperatures below for your desired doneness. Remember that steaks will continue to rise in temperature 5 to 10 degrees while at rest after grilling so be sure to remove from heat about 5-7 degrees lower than your desired temp.

GRILLING TIMES

Times are organized by thickness and internal temperature for easy grilling. This allows the meat to cook evenly all the way through. Grill times are suggested guidelines only, actual times may vary depending on your grill type and temperature.

GIVE IT A REST

Always let steaks rest for 5 minutes before slicing to reduce the amount of juice lost when cutting into the meat.

How long does it take to get our beef after I order it?

The short answer is: it depends. We have animals at varying stages of finishing here on the ranch at different times. Because beef is at its best quality at certain weights, we won’t deliver it to processing until we know the animal is ready.

How much freezer space do I need?

Our rule of thumb is 5 cu. ft. per 100 pounds of beef, to insure adequate storage space and ease in sorting.
